  • Spices & Flavorings: 1 lemon, sliced; 1/4 cup (30 g) Old Bay seasoning (or Cajun seasoning); 2 bay leaves; 1 tsp black peppercorns; 1/2 tsp crushed red pepper flakes (optional, for heat); 1 tbsp kosher salt
  • To Serve: 4 tbsp (60 g) unsalted butter, melted; Fresh parsley, chopped; Lemon wedges

Step 1:
Fill a large stockpot with 10 cups (2.5 L) of water. Add Old Bay seasoning, salt, bay leaves, black peppercorns, crushed red pepper flakes, onion, garlic, and lemon slices. Bring to a boil over high heat.

Add potatoes to the boiling water. Reduce heat to a simmer and cook for 12 15 minutes, until just tender.
Step 3:
Add corn and smoked sausage. Simmer for another 5 7 minutes.

Step 5:
Drain the pot, discarding the cooking liquid, but reserving the solids. Transfer the shrimp, sausage, corn, and potatoes to a large platter or spread out on newspaper for a classic presentation.
Step 6:
