  • For the Crust: 1 1/4 cups (160 g) all-purpose flour, 1/4 cup (30 g) almond flour, 2 tbsp granulated sugar, 1/2 tsp fine sea salt, 1/2 cup (115 g) cold unsalted butter cubed, 1 large egg yolk, 3–4 tbsp ice water
  • For the Filling: 5–6 ripe plums pitted and thinly sliced, 3 tbsp clover honey (plus extra for drizzling), 2 tbsp turbinado or demerara sugar, 1 tbsp cornstarch, 1/2 tsp vanilla extract, 1/4 tsp ground cinnamon, pinch of salt
  • For Assembly: 1 egg beaten (for egg wash), 1 tbsp turbinado sugar (for sprinkling), fresh clover blossoms or edible flowers optional
