- For the Crust: 1 1/4 cups (160 g) all-purpose flour, 1/4 cup (30 g) almond flour, 2 tbsp granulated sugar, 1/2 tsp fine sea salt, 1/2 cup (115 g) cold unsalted butter cubed, 1 large egg yolk, 3–4 tbsp ice water
- For the Filling: 5–6 ripe plums pitted and thinly sliced, 3 tbsp clover honey (plus extra for drizzling), 2 tbsp turbinado or demerara sugar, 1 tbsp cornstarch, 1/2 tsp vanilla extract, 1/4 tsp ground cinnamon, pinch of salt
- For Assembly: 1 egg beaten (for egg wash), 1 tbsp turbinado sugar (for sprinkling), fresh clover blossoms or edible flowers optional
Instructions
- Prepare the crust:
- In a large bowl whisk together all-purpose flour almond flour sugar and salt. Add cold butter and use a pastry cutter or fingertips to work into the flour until the mixture resembles coarse crumbs.
- Mix egg yolk:
- In a small bowl whisk the egg yolk with 3 tbsp ice water. Drizzle over the flour mixture and stir until the dough just comes together adding extra water as needed. Shape into a disk wrap and chill for at least 30 minutes.
- Preheat oven:
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Prepare filling:
- In a bowl toss sliced plums with clover honey sugar cornstarch vanilla cinnamon and a pinch of salt.
- Roll dough:
- Roll out the dough on a lightly floured surface into a 12-inch (30 cm) circle. Transfer to the prepared baking sheet.
- Assemble galette:
- Arrange the plum mixture in the center of the dough leaving a 2-inch (5 cm) border. Gently fold the edges over the fruit pleating as you go.
- Brush and sprinkle:
- Brush the crust with beaten egg and sprinkle with turbinado sugar.
- Bake:
- Bake for 35–40 minutes or until the crust is golden and the fruit is bubbling.
- Finish:
- Drizzle the warm galette with a little extra clover honey and scatter with fresh clover blossoms if using. Cool briefly before slicing.
