05 - Remove from heat and let cool slightly before serving.
06 - Serve warm or at room temperature with fresh flatbread or enjoy by the spoonful.

# Helpful Hints:

01 -
  • It turns humble dates into something luxurious with just one other ingredient.
  • The warm ghee brings out a toasty, nutty sweetness that plain dates never have.
  • Its ready in fifteen minutes and feels like youve been cooking all morning.
  • You can eat it straight from the pan with a spoon and no one will judge you.
02 -
  • Keep the heat low or the dates will scorch and turn bitter instead of sweet.
  • Stir constantly once the dates hit the pan, they stick fast if you walk away even for a minute.
  • If the paste seems too thick, add another small spoonful of ghee and stir it in while still warm.
03 -
  • Use the softest, stickiest dates you can find, hard or dry dates wont break down into a smooth paste no matter how long you stir.
  • If youre making this for someone who cant have dairy, coconut oil works surprisingly well and adds a subtle tropical sweetness that complements the dates.
